摘要:以葡萄皮渣为主要原料,以多酚提取率为考察指标,在单因素实验的基础上,采用Box-Behnken响应曲面设计对超声辅助双水相提取的超声时间、(NH4)2SO4用量、液料比进行优化;同时通过混料设计,以感官评分为指标,对多酚牛奶咀嚼片的配方进行研究。结果表明:多酚提取的最佳工艺条件为超声时间30min,(NH4)2SO4用量0.30g/m L,液料比31 m L/g,多酚提取率为1.72±0.04%;多酚牛奶咀嚼片的配方为葡萄皮多酚添加量3.0%,全脂乳粉添加量57%,微晶纤维素添加量22%,甘露醇添加量18%,感官评分为94.02±0.18分。多酚提取工艺稳定可行,多酚牛奶咀嚼片营养丰富,口感纯正,稳定性好,具有良好的工业生产加工前景。
This study was designed to use grape peel applied in milk chewable tablets. Effects of ultrasonic time, amount of (NH4)2SO4 and solid-liquid ratio were studied via the single factor methodologies, and then the extraction parameters was determined by Box-Behnken response surface methodology. The formulations of polyphenol milk chewable tablets were optimized using mixture design. Study results showed that optimized extraction parameters was ultrasonic time 30 min, amount of (NH4)2SO4 0.30g/mL and solid-liquid ratio31mL/g and optimized proportion was polyphenol 3.0%, mik 57%, microcrystalline cellulose 22%and mannitol 18%. With the optimal formula, extraction parameters are stable and feasible and the polyphenol milk chewable tablets tasted fine and smoot, it overall flavor was good.
