摘要:蓝莓果渣为蓝莓加工过程中的副产物,富含天然水溶性抗氧化剂花青素,还含有多酚和膳食纤维等物质。合理利用蓝莓果渣对企业提高经济效益和解决环境污染有积极的意义,该文对近几年国内外关于蓝莓果渣研究进展进行了综述和展望。
Blueberry pomace as by-product of blueberry producing process, is rich in natural soluble antioxidants anthocyanin, and it also contains substances such as polyphenols and dietary fiber, etc. Reasonable utilization of blueberry pomace has positive significance on improving the economic efficiency and solving the environmental pollution. In this paper, the most recent advances in the utilization of blueberry pomace both at home and abroad, were summarized and the existing problems and the developing trend of blueberry pomace were discussed.
